One of my favorite special holiday meals is Corned Beef and Cabbage on St Patrick’s Day. Here is an easy recipe you can make with just 10 minutes of prep time!

Instant Pot Corned Beef & Cabbage
Celebrating St. Patrick's Day on your boat? Corned beef and cabbage is a classic St. Patrick’s Day meal. Make it even easier by cooking the corned beef, cabbage, carrots, and potatoes in your Instant Pot.
Equipment
- 1 Instant Pot
Ingredients
- 3-4 lb corned beef brisket, with pickiling spice packet
- ½ medium yellow onion, sliced
- 2 cloves garlic
- 2 cups beef broth
- ½ lb baby potatoes sometimes called new potatoes
- 2 large carrots, cut into 3-inch pieces
- ½ medium green cabbage, cut into 2-inch wedges
- 1 tbsp Kosher salt or to taste
- 1 tbsp freshly ground black pepper or to taste
- ¼ cup whole grain mustard serve at table
- ¼ cup fresh parsley, chopped optional
- ½ cup Malt Vinegar you can use cider vinigar instesad of malt.
Instructions
- Rinse brisket with cold water and pat dry thoroughly.
- Place a trivet into a 6 or 8 quart Instant Pot.
- Place sliced onions onto trivet in Instant Pot.
- Place brisket on top of onion mixture.
- Top with garlic and pickling spices.
- Pour in 2 cups of beef broth.
- Close cover and select manual/pressure cook setting on high pressure. Set cook time for 70-90 minutes.
- Once cook time has ended, let the pressure release naturally for 5 minutes.
- After 5 minutes, do a quick release of any remaining pressure.
- Remove brisket from Instant Pot and place on serving platter. Cover with foil to keep it warm.
- Reserve 2 cups cooking liquid in the instant Pot, discard remaining liquid.
- Add baby potatoes and carrots to the liquid in the Instant Pot and top with cabbage.
- Season with salt and pepper to taste.
- Cook on high pressure for 3 minutes. When finished cooking, quick-release the pressure according to manufacturers directions.
- Thinly slice corned beef against the grain.
- Serve with potatoes, carrots, and cabbage. Garnish with fresh parsley.
- Serve with stone ground mustard on the side and Malt Vinegar to pour over.
Notes
For a 3-4 lb Corned Beef, if you want it tender but easy to slice, set on manual high for 75 minutes. For a 3-4 lb Corned Beef, if you want it shredded texture, set on manual high for 90 minutes.
