
Brenda’s Docking Cookies
Everyone raves about Brenda's Light & Fluffy Chocolate Chip Cookies. Brenda watches for boats arriving in our home marina and bakes up a quick batch to deliver when they dock. When we are cruising, she bakes up a batch to share when we dock. They have been dubbed "Brenda's Docking Cookies". This easy recipe can be prepared in advance, and stored in the freezer. It only takes about 12 minutes in a convection or toaster oven (like many boats have) to bake them up fresh and hot!
Equipment
- 1 Small Cookie Scoop (2 tablespoon) You can also use a tablespoon, but a scoop makes prep easier.
- 2 Mixing Bowls
- 1 Small Cookie Sheet (Round pans work in convection ovens)
- 1 Parchment Paper (To make cleanup easier)
- 1 Cooling Rack (Optional)
- 1 Pirates Cutlass (Optional but recommended)
Ingredients
- 1¾ stick Unsalted butter Soften to room temperature
- ¾ cup Granulated Sugar
- ¼ cup Brown Sugar
- 2¼ cups All-purpose Flour
- ½ tsp Baking Soda
- 1 tsp Course Salt
- 2 tsp Pure Vanilla Extract
- 2 large Eggs Room temprature
- 2 cups Chocolate Chips about 12 ounces
- ½ cup Finely chopped walnuts or pecans (optional)
Instructions
- In a bowl, whisk together flour and baking soda.
- In a separate bowl, beat butter with both sugars until fluffy
- Add eggs, vanilla, and salt into butter/sugar mixture until well combined.
- Add flour mixture until just combined.
- Stir in Chocolate Chips and optional nuts
Freeze Ahead Method
- Drop tablespoon (or cookie scoop) ball of dough onto parchment 1" apart.

- Place dough balls into freezer for at least 1 hour.

- Remove frozen dough balls and place into a zip-lock bag.

Baking
- Preheat oven to 350℉
- Place dough balls 2" apart on a parchment-covered cookie or baking pan.

- Bake until cookies are golden around the edges but soft in the center. About 15 minutes from frozen, 12 minutes from fresh. You may need to adjust timing for your oven.
- Transfer to a wire rack to cool or cool in pan on a trivet. Use the Pirate Cutlass to keep the crew at bay if you can until they cool!

Notes
You can either make the dough ahead and freeze, or go directly from the mixing bowl to the parchment to bake.
