Equipment

  • 1 Mixing bowl
  • 1 Mini-muffin sheet or Baking sheet

Ingredients
  

  • 1 box Frozen mini filo shells (phyillo dough, 15 per box)
  • 10 oz can Diced Petite Tomotao's with Peppers & Onions I like Rot*el Brand
  • â…” cup Mayonaise
  • ¼ cup Shredded Cheddar Cheese
  • ½ cup Grated Parmesan Cheese
  • ¼ cup Shredded Mozzeralla Cheese

Instructions
 

  • Preheat oven to 350°.
  • Drain tomato’s well, pressing between paper towels. Combine tomatoes with salt & pepper (to taste). Stir together mayonnaise and cheeses in a medium bowl. Divide tomato mixture among pastry shells (approx. 1/4 full), and top with mayonnaise mixture.
  • Bake at 350° for 18 to 20 minutes until browned on top.
  • Serve immediately.
