Tomato Tartletts
Little bite size tartlets, similar to a tomato pie. (Makes 15)
Equipment
- 1 Mixing bowl
- 1 Mini-muffin sheet or Baking sheet
Ingredients
- 1 box Frozen mini filo shells (phyillo dough, 15 per box)
- 10 oz can Diced Petite Tomotao's with Peppers & Onions I like Rot*el Brand
- â…” cup Mayonaise
- ¼ cup Shredded Cheddar Cheese
- ½ cup Grated Parmesan Cheese
- ¼ cup Shredded Mozzeralla Cheese
Instructions
- Preheat oven to 350°.
- Drain tomato’s well, pressing between paper towels. Combine tomatoes with salt & pepper (to taste). Stir together mayonnaise and cheeses in a medium bowl. Divide tomato mixture among pastry shells (approx. 1/4 full), and top with mayonnaise mixture.
- Bake at 350° for 18 to 20 minutes until browned on top.
- Serve immediately.
