This is one of our favorite quick side dishes when cooking something on the BBQ. It’s an easy way to get that salted Steak House Baked Potato flavor with just a few minutes of prep time.

Smashed Potatoes
Equipment
- 1 Large Microwave safe bowl
- 1 Grill/Oven safe tray
Ingredients
- 12 small Thin skinned potatoes. About golfball size. We use about 4 per person. Red or Yukon Gold work best.
- 1 tbsp Olive Oil or cooking spray
- 1 tbsp Course salt
- 1 tsp Ground black pepper
- ¼ cup Sour Cream
Instructions
- Wash potatoes
- Place potatoes in a large microwave safe bowl.

- Microwave the potatoes 5 to 10 minutes until somewhat soft. Poke with a kitchen knife to make sure that they are done.

- Line an oven safe tray (we use a vegetable BBQ grill tray) with foil and spray with olive oil or cooking spray.

- Arrange the potatoes on the tray.

- Use a small glass, and press down on the potatoes "Smashing" them until the skin pops. About ½ inch thick.

- Repeat with all of the potatoes. Don't over-smash!

- Spray or brush smashed potatoes with olive oil.

- Add salt and pepper. Course ground works best.

- Flip over potatoes, spray with oil, and salt and pepper the other side.

- Place the pan on a hot bbq grill (next to your other food) and heat for 5 minutes or until bottoms start to brown. You can also put them in a broiler or oven.

- Carefully flip the potatoes and heat for another 5 minutes.

- Remove from the pan and arrange on a plate.

- Add a dollop of sour cream to the top of each, and serve hot!
